Smoked Beef Brisket
We cook our Brisket the only way it should be cooked, low and slow. Seasoned with our house made coffee and brown sugar rub then smoked for 20 hours.
Smoked Pulled Pork with Carolina BBQ Sauce
We start with smoking perfectly seasoned pork butt with our coffee brown sugar rub. On hour 6 of smoking we start the basting process with a mustard, vinegar Carolina style sauce.
BBQ Jack Chicken
It starts with fresh whole chickens in an apple cider brine. Smoked and grilled for two hours. Just before pulling these birds off the grill we smother them in a house made Jack Daniels BBQ sauce.
Apricot Lime Chicken
Sweet and tangy, make a great combination for this dish. These whole chickens marinated in fresh garlic and herbs go on the smoker for two hours. At the end we grill and smother them in an apricot sweet chilli lime glaze.

This summer favourite is full of Cuban flavours. Marinated and glazed with Orange juice and cumin.
Brined and Hot Smoked Side of Salmon
We bathe our salmon in garlic, dill, and lemon then brine for 2 days. Once it is perfectly brined we throw it on hot smoke for 3 hours. This is where the combination of tangy and sweet comes into play while we baste it every 30 mins with a Dijon mustard, maple syrup and dill barbecue glaze.
Pork Belly Burnt Ends
Just when you thought pork belly was great on its own, wait till you taste it smoked for 6 hours. These burnt ends are braised in apple juice, butter, brown sugar and barbecue sauce until it’s a tender, tasty morsel of candy goodness.
